Denver, CO (July 3, 2012) — Drivers heading through Denver may have noticed some recent changes near the intersection of Speer and Champa.
Crews there have been hard at work on an addition the Colorado Convention Center – Blue Bear Farm.
The working farm is collaboration between the Convention Center and its caterer Centerplate. The partnership will help incorporate fresh, locally grown herbs and produce into dishes prepared for event attendees as well as diners at the Blue Bear Food Truck.
While the farm hasn’t officially opened yet some of the produce currently being grown has already been harvested and used by Centerplate staff which is very exciting for Executive Chef Carmen Callo.
Callo told 9NEWS he’s extremely excited about the project and looks forward to incorporating the freshest and best tasting produce the chefs can get into guest’s meals while helping the Convention Center continue its commitment to sustainability.
“As part of our sustainability program and desire to serve fresh foods it was just kind of the next natural evolution in our hospitality program at the convention center to initiate a farm project,” Callo told 9News. “It’s kind of been in the works for a couple of years.” Additionally creators hope the farm will set the convention center apart from other venues and generate more business when it opens later this summer.
